Name: Pork fillet stuffed with gorgonzola and pear

Ingredients: 120 g unsalted butter; 1 shallot (finely diced); 2 hard pears (peeld and cut into small cubes); 2 pork fillet (approx 500g each); 200 g gorgonzola piccante; 6 sprigs tarragon (leaves removed); 2 tbsp olive oil; 4 tbsp plain flour; 240 ml white wine; salt and pepper

Two stuffed pork fillets tied with string are baked in a brown sauce with visible herbs and chunks of vegetables in a rectangular roasting tin.
