Name: Hot Smoked Beef Salad

Ingredients: 200 g new potatoes; drizzle olive oil; ice for cooling; 150 g kale; 100 g sugar snap peas (sliced); 50 g watercress; 2 spring onions (sliced); 500 g hot smoked beef fillet (sliced); 2 tbsp toasted seeds; 4 tbsp olive oil; 2 tbsp horseradish sauce; 1/2 lemon (juice and zest); 2 tbsp parsley (finely chopped)

Slices of medium-rare roast beef are served on a bed of leafy greens and watercress atop sliced potatoes with a creamy white sauce, arranged on a white plate.
