Ingredients: 2 lemongrass (outer leaves removed and roughly chopped); 6 dried red chillies (soaked in hot water until soft); 3 banana shallots (roughly chopped); 4 cm ginger (peeled and roughly chopped); 10 cloves garlic (peeled and roughly chopped); 2 tsp mild curry powder; 2 tsp ground coriander; 1 tsp ground cumin; 1 tsp turmeric; 1/2 tsp ground white pepper; 1 tsp salt; 2 tbsp fish sauce; 1 lime (juiced)
