Ingredients: 6 Mackerel fillets; 1/2 lemon (juiced); 1 tbsp olive oil; 2 large cucumbers (peeled); 4 carrots (peeled); 300 g daikon or radish; 100 g spring onions (sliced); 6 cloves garlic (thinly sliced); 50 g ginger (peeled and cut into matchsticks); 2 tbsp caster sugar; 1.5 tbsp fish sauce; 1.5 tbsp light soy sauce; 2 tbsp rice vinegar; 1 tbsp Togarashi seasoning or chilli flakes; 20 g coriander leaves; 3 plums or peaches (stones removed and cut into segments)
