Name: Halibut with butter sauce & wilted spinach

Ingredients: 4 potatoes (I used Maris Piper) (peeled and cut into 2 cm chunks); 3 tbsp goose or duck fat; 4 halibut fillets; 25 g butter; 400 g spinach; 50 ml white wine vinegar; 40 ml dry white wine; 2 tbsp finely chopped shallots; 1 bay leaf; 1/2 tsp white peppercorns; 30 ml double cream; 200 g unsalted butter (cubed)

A spoon drizzles sauce over a piece of white fish on a bed of green beans and roast potatoes, garnished with fresh chopped herbs, served on a white plate.
