Ingredients: 3 courgettes (sliced); 2 small aubergines (sliced); 4 tomatoes (sliced); 3 peppers (one will be for the sauce); 2 tbsp olive oil; 1 onion (diced); 4 cloves garlic (crushed); 400 g tin chopped tomatoes; 3 sprigs thyme; 1 tbsp dried oregano; 2 tsp balsamic vinegar; 10 basil leaves (torn); 1 clove garlic (minced); 2 sprigs thyme (leaves removed); 4 tbsp extra virgin olive oil
